Syrup Base / Simple Cola

    Make concentrated tea/coffee base

    If using tea: steep 1.5 tablespoons of strong black tea in 3/4 cup near-boiling water for 5 minutes, then strain to yield 3/4 cup strong tea. If using coffee concentrate: use 3/4 cup cold brew concentrate. Cool to room temperature.

    Combine sugars and water

    In a small saucepan combine 1/2 cup granulated sugar, 1/4 cup packed light brown sugar and 3/4 cup water. Heat gently over medium-low, stirring until sugars dissolve to create a simple syrup (do not boil vigorously).

    Integrate citrus juices

    Remove the syrup from heat. Stir in 1/4 cup fresh lime juice and 1/8 cup fresh lemon juice into the syrup, mixing thoroughly.

    Add tea/coffee concentrate

    Stir the cooled tea or coffee concentrate into the sweetened citrus syrup until uniform. Allow to cool fully to room temperature.

Aromatic & Flavoring Oils/Spices

    Infuse spices and vanilla

    While the syrup is still warm (but off the heat), add 1 tablespoon vanilla extract (or scraped seeds from 1 vanilla bean), 1/2 teaspoon orange zest, a pinch of freshly grated nutmeg, 1/8 teaspoon ground cinnamon, and 1/4 teaspoon lightly crushed coriander seeds. Stir and let steep for 15–20 minutes to extract aromatic oils.

    Strain the syrup

    After steeping, strain the syrup through a fine-mesh sieve or cheesecloth into a clean container to remove solids and zest. Cool completely in the refrigerator if not already cool.

    Assemble Mexican-style Coke (single liter batch)

    Fill a large pitcher with 2 cups of ice. Pour the chilled cola base (about 1 to 1 1/2 cups, depending on desired sweetness) into the pitcher. Slowly add 1 liter of chilled Mexican-style cola (bottled cane-sweetened Coca-Cola de Mexico) or chilled sparkling water to reach desired intensity, stirring gently to combine. Taste and adjust: add more syrup for sweeter/stronger flavor or more sparkling water for a lighter drink.

    Serve

    Pour into glasses over ice, garnish each with a lime wheel or wedge. Serve immediately. If using bottled Mexican Coke, simply pour chilled bottle over ice and garnish with lime for the classic presentation.

    Storage

    Store any unused syrup in a sealed container in the refrigerator for up to 2 weeks. When ready to serve, mix syrup with chilled sparkling water or bottled Mexican Coke at a ratio that tastes best (start 1 part syrup to 3 parts soda).
