Simple Syrup Base (for flavored Jarritos)

Make the simple syrup
Combine 2 cups granulated sugar and 1 cup water in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar fully dissolves. Do not boil vigorously; simmer 2–3 minutes once dissolved. Remove from heat and let cool to warm.

Prepare fruit concentrate
While the syrup cools, choose your fruit flavor. For mango, pineapple, strawberry or grapefruit: place 1 cup chopped fruit in a blender with 2–3 tablespoons of the warm syrup and 2 tablespoons water. Blend to a smooth puree. For tamarind: if using dried tamarind, soak 1/2 cup pulp in 1/2 cup warm water 10 minutes, mash and strain to remove fibers and seeds; then mix with 1–2 tablespoons warm syrup. Strain the blended fruit through a fine-mesh sieve into a bowl, pressing to extract as much liquid and flavor as possible — you should get roughly 3/4–1 cup of concentrated fruit liquid.

Adjust sweetness and brightness
Taste the fruit concentrate. Add more warm simple syrup 1 tablespoon at a time to reach desired sweetness (Jarritos are noticeably sweet). Stir in 2 tablespoons fresh lime juice if you want a brighter, slightly tart balance (especially helpful for mango, tamarind or pineapple). If using citric acid, dissolve 1/4 teaspoon into the concentrate now for a brighter, shelf-stable finish.

Assemble the soda
For a single 12–16 oz serving: combine 1/4 cup (60 ml) fruit concentrate with 1 to 1 1/4 cups (240–300 ml) very cold carbonated water, depending on how intense you want the flavor. Stir gently to combine without flattening carbonation. For a 2 L batch: mix about 1 1/3 cups fruit concentrate with 1.9 L cold carbonated water. If using glycerin for a silkier mouthfeel, whisk 1 teaspoon into the concentrate before combining with soda.

Chill and serve
Fill a glass with ice, pour the flavored soda over the ice, garnish with a lime wedge, and serve immediately. Keep any unused fruit concentrate refrigerated in a sealed container up to 5 days; add citric acid if you plan to store longer. Always use very cold soda to minimize CO2 loss when mixing.
