Method

Preparation

  1. 1

    Chop Vegetables

Dice the bell pepper and onion into small pieces and set aside.

Cooking Eggs

  1. 2

    Beat the Eggs

In a mixing bowl, crack the four eggs and add salt and black pepper. Whisk together until well mixed.

  2. 3

    Heat the Pan

In a medium non-stick skillet, melt the butter over medium heat until it starts to foam.

  3. 4

    Cook the Eggs

Pour the beaten eggs into the skillet. Allow them to cook undisturbed for about 1 minute until they start to set around the edges.

  4. 5

    Scramble the Eggs

Using a spatula, gently stir the eggs, pushing them from the edges towards the center. Continue to cook for another 2-3 minutes until the eggs are softly set but still slightly runny.

Adding Vegetables and Toppings

  1. 6

    Add Vegetables

Sprinkle the diced bell pepper and onion over the scrambled eggs. Stir gently to combine and allow the residual heat to soften the vegetables for about 1 minute.

  2. 7

    Add Cheese

Sprinkle the grated cheese over the eggs and allow it to melt slightly for about 30 seconds.

  3. 8

    Serve with Salsa

Remove from heat and serve immediately with salsa on the side or on top of the scrambled eggs.
