Prepare Broth

Combine Ingredients
In a large pot, combine the beef broth, bay leaves, thyme, salt, and black pepper. Bring to a simmer over medium heat.

In a large skillet, heat the olive oil and butter over medium heat.

Caramelize Onions
Cook the onions, stirring occasionally, for about 25-30 minutes, until they are golden brown and caramelized.
Combine and Serve

Mix Broth and Onions
Once the onions are caramelized, add them to the simmering broth. Let it simmer for an additional 10 minutes to combine flavors.

Prepare Bread and Cheese
Preheat your broiler. Place the slices of French bread on a baking sheet and toast them under the broiler until golden brown, about 1-2 minutes per side.

Assemble Soup
Ladle the soup into oven-safe bowls, place a slice of toasted bread on top of each bowl, and then sprinkle the shredded Provolone and Swiss cheeses over the bread.

Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden brown. Watch closely to prevent burning.
