Prepare Mac & Cheese

Cook Macaroni
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Add Cheeses
Remove the saucepan from heat and stir in the cheddar cheese and cream cheese until melted and smooth. Add garlic powder, onion powder, salt, black pepper, and diced jalapenos. Mix until well combined.

Combine with Pasta
Add the cooked macaroni to the cheese sauce and stir until the pasta is evenly coated. Allow it to cool slightly, then refrigerate for at least 1 hour to firm up.

Prepare Breading Station
Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for bread crumbs.

Once the mac & cheese mixture is cool, scoop out about 2 tablespoons of the mixture and roll into a ball. Repeat until all the mixture is used.

Dredge each ball in flour, dip in the beaten eggs, and finally coat with bread crumbs. Place the breaded balls on a baking sheet.

In a large, deep pot or fryer, heat vegetable oil to 350°F (175°C).

Carefully add the breaded mac & cheese balls to the hot oil in batches. Fry for 3-4 minutes or until golden brown. Use a slotted spoon to remove them and drain on paper towels.
