Method

Preparation of Oysters

  1. 1

    Cleaning the Oysters

Rinse the fresh oysters under cold running water to remove any grit or sand. Scrub the shells gently with a brush.

  2. 2

    Shucking the Oysters

Using an oyster knife, carefully insert the knife into the hinge of the oyster shell and twist to open it. Remove the top shell and gently detach the oyster from the bottom shell. Keep the oyster in the bottom shell.

Making the Topping

  1. 3

    Preparing the Garlic Butter

In a small saucepan, melt the unsalted butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.

  2. 4

    Mixing the Topping

In a mixing bowl, combine the sautéed garlic butter, chopped parsley, grated Parmesan cheese, bread crumbs, lemon zest, black pepper, and hot sauce. Mix well until combined.

Baking the Oysters

  1. 5

    Preparing the Baking Dish

Preheat your oven to 375°F (190°C). Spread the rock salt evenly in a baking dish to create a stable base for the oysters.

  2. 6

    Assembling the Oysters

Place the shucked oysters on top of the rock salt in the baking dish. Spoon the topping mixture generously over each oyster.

  3. 7

    Baking the Oysters

Bake in the preheated oven for 10-12 minutes or until the topping is golden brown and the oysters are cooked through.

Serving

  1. 8

    Final Touch

Remove the oysters from the oven and let them cool for a few minutes. Serve warm with additional lemon wedges and hot sauce on the side.
