Clean the Mussels
Rinse the mussels under cold water, scrubbing the shells with a brush to remove any dirt or barnacles. Remove the beards (the fibrous threads) by pulling them away from the shell. Discard any mussels that are open and do not close when tapped.
Cooking the Seafood Broth
Add Tomatoes and Seasonings
Add the diced tomatoes to the pot along with the saffron threads, salt, black pepper, and red pepper flakes. Stir well and let it simmer for about 5 minutes.
Incorporate Spinach and Wine
Stir in the chopped spinach and pour in the white wine. Allow the mixture to simmer for another 3-4 minutes until the spinach wilts and the alcohol from the wine evaporates slightly.

Prepare the Bread
While the mussels are cooking, slice the crusty bread into thick pieces. Optionally, toast the slices on a grill or under a broiler until golden brown.
