Method
Prepare the Filling
Cook the Beef
In a skillet over medium heat, add the ground Certified Angus Beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Season the Beef
Once the beef is cooked, season with salt, black pepper, garlic powder, and onion powder. Stir to combine and cook for an additional 1-2 minutes.
Add Cheese
Remove the skillet from heat and stir in the American cheese until melted and well combined. Let the filling cool slightly.
Assemble the Egg Rolls
Prepare the Wrappers
Lay an egg roll wrapper on a clean surface with one corner pointing towards you.
Fill the Wrapper
Place about 2 tablespoons of the beef and cheese filling in the center of the wrapper.
Roll the Egg Roll
Fold the bottom corner over the filling, then fold in the sides. Roll tightly towards the top corner. Use a dab of water to seal the edge.
Repeat
Continue the process until all filling is used, placing finished rolls on a tray.
Prepare Chipotle Mayonnaise

In a bowl, combine mayonnaise, chipotle powder, and lime juice. Whisk until smooth and well blended.
