Method
Fish
- 1
Prepare the Batter
In a bowl, mix the Southern fried batter mix with cold water until smooth. Add salt and black pepper to taste.
- 2
Heat the Oil
In a deep fryer or a large, heavy pot, heat the oil to 350°F (175°C).
- 3
Dip and Fry the Fish
Dip each haddock filet into the batter, allowing the excess to drip off. Carefully place the battered fish into the hot oil and fry for 4-6 minutes, or until golden brown and cooked through. Remove and drain on paper towels.
Fries
- 4
Prepare the Potatoes
Peel the potatoes and cut them into thick strips. Rinse under cold water to remove excess starch.
- 5
Heat the Oil for Fries
In a separate deep fryer or pot, heat the oil to 350°F (175°C).
- 6
Fry the Potatoes
Fry the potato strips in batches for about 5-7 minutes, or until golden brown and crispy. Remove and drain on paper towels. Season with salt.
Coleslaw
- 7
Prepare the Vegetables
Thinly slice the green cabbage and grate the carrots.
- 8
Make the Dressing
In a large bowl, combine mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well.
- 9
Combine
Add the sliced cabbage and grated carrots to the dressing. Toss until well combined. Refrigerate for at least 30 minutes before serving.
