Preparing the Mahi Mahi

    Prepare the Breading

    In a mixing bowl, combine flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Gradually whisk in the cold sparkling water until you have a smooth batter.

    Heat the Oil

    In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Fish

    Dip each mahi mahi fillet into the batter, allowing excess to drip off. Carefully place the fillets into the hot oil and fry for about 4-5 minutes per side, or until golden brown and crispy. Remove and drain on paper towels.

Making the Mango Salsa

    Combine Ingredients

    In a bowl, mix together the diced mango, red onion, red bell pepper, cilantro, and lime juice. Season with salt to taste and set aside.

Preparing the Cranberry Aioli

    Mix Aioli Ingredients

    In a small bowl, whisk together mayonnaise, cranberry sauce, minced garlic, lemon juice, and salt to taste. Adjust seasoning if necessary.

Assembling the Sandwich

    Toast Brioche Rolls

    Lightly toast the brioche rolls until golden brown.

    Build the Sandwich

    On each toasted brioche roll, place a crispy mahi mahi fillet, top with mango salsa, sliced avocado, and drizzle with cranberry aioli.
