Crispy Calamari

    Prepare the Calamari

    In a large bowl, soak the cleaned calamari rings in buttermilk for about 30 minutes. This helps tenderize the calamari.

    Mix the Dry Ingredients

    In another bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well until combined.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles, the oil is ready.

    Coat the Calamari

    Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the calamari rings in the flour mixture, coating them evenly.

    Fry the Calamari

    Carefully add the coated calamari to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Sauté the Garlic

    In a saucepan over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

    Add Tomatoes and Spices

    Add the crushed tomatoes, oregano, basil, salt, black pepper, red pepper flakes, and sugar to the saucepan. Stir to combine.

    Simmer the Sauce

    Bring the sauce to a gentle simmer, reduce the heat to low, and let it cook for about 15-20 minutes, stirring occasionally.

    Adjust Seasoning

    Taste the marinara sauce and adjust seasoning with more salt or pepper if needed.
