Preparation of Oysters

Shucking the Oysters

Carefully shuck the oysters using an oyster knife. Hold the oyster with a towel and insert the knife at the hinge, twisting to open. Remove the top shell and loosen the oyster from the bottom shell, ensuring it stays in its natural liquor.

Steaming (Optional)

If you prefer steamed oysters, place the shucked oysters in a steamer basket over boiling water for about 5 minutes. They are done when the edges start to curl.

Plating the Oysters

Arrange the shucked oysters on a serving platter, keeping them on the half shell. If steamed, allow to cool slightly before serving.

Adding Accompaniments

Cut the fresh lemon into wedges and arrange on the platter. Serve with a bowl of cocktail sauce and a small dish of prepared horseradish on the side.

Garnishing

Optionally, garnish with fresh herbs such as parsley or dill for added flavor and presentation.
