Prepare the Cajun Salmon

    Season the Salmon

    Rub the salmon fillets with olive oil, then coat both sides with Cajun seasoning, salt, and black pepper. Ensure the fillets are evenly seasoned.

    Cook the Salmon

    Heat a skillet over medium-high heat. Once hot, add the seasoned salmon fillets skin-side down and cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove from heat and let rest.

Prepare the BLT

    Cook the Bacon

    In the same skillet used for the salmon, cook the bacon slices over medium heat until crispy, about 5-7 minutes. Remove and place on paper towels to drain excess fat.

    Slice the Tomato

    While the bacon is cooking, slice the large tomato into even slices.

    Toast the Bread

    Lightly toast the whole grain bread slices until golden brown, either in a toaster or on a skillet.

    Assemble the Sandwich

    Spread 1 tablespoon of mayonnaise on one side of each slice of toasted bread. On two slices, layer the lettuce leaves, followed by the crispy bacon, tomato slices, and finally, the Cajun salmon. Top with the remaining slices of bread, mayonnaise side down.
