Preparation
- 1
Prepare the Oysters
Rinse the fresh oysters under cold water and shuck them if they aren't already shucked. Pat them dry with paper towels.
- 2
Set Up Frying Station
In a shallow bowl, combine the all-purpose flour, cornmeal, salt, and black pepper. In another bowl, whisk together the eggs and milk.
Frying Oysters
- 3
Coat the Oysters
Dip each oyster first into the egg mixture, then into the flour mixture, ensuring they are well coated.
- 4
Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 5
Fry the Oysters
Carefully add the coated oysters to the hot oil in batches, frying for about 2-3 minutes on each side or until golden brown. Remove them with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
Making Buffalo Sauce
- 6
Combine Sauce Ingredients
In a small saucepan over medium heat, melt the unsalted butter. Add the hot sauce, garlic powder, and Worcestershire sauce, stirring until well combined.
- 7
Toss Oysters in Sauce
Once the oysters are fried, toss them in the buffalo sauce until evenly coated.
Serving
- 8
Plate the Oysters
Arrange the buffalo oysters on a serving platter.
- 9
Garnish
Crumble the Maytag bleu cheese over the fried oysters and sprinkle with chopped fresh parsley before serving.
