Method

Bison Burger Patty

  1. 1

In a large bowl, combine the ground bison with salt, black pepper, garlic powder, and onion powder. Mix until just combined. Form the mixture into 4 equal-sized patties.

  2. 2

Preheat your grill to medium-high heat. Grill the bison patties for about 4-5 minutes on each side, or until they reach your desired doneness.

  3. 3

During the last minute of grilling, place a slice of Gouda cheese on each patty to melt.

Whiskey Sauteed Onions

  1. 4

While the patties are grilling, slice the onion into thin rings.

  2. 5

In a skillet, heat the olive oil over medium heat. Add the sliced onions and season with salt and black pepper. Cook for about 5 minutes, stirring frequently.

  3. 6

Add the whiskey to the skillet and continue to cook until the onions are caramelized and the whiskey has cooked down, about 10-15 minutes.

Smoked Aioli Drizzle

  1. 7

In a small bowl, combine the mayonnaise, smoked paprika, minced garlic, and lemon juice. Mix until well combined. Adjust seasoning to taste.

Burger Assembly

  1. 8

Toast the burger buns lightly on the grill for about 1-2 minutes.

  2. 9

Assemble the burgers by placing a bison patty on the bottom half of each bun. Top with sautéed onions, a lettuce leaf, and slices of tomato. Drizzle with the smoked aioli and cover with the top half of the bun.

Caesar Salad

  1. 10

Chop the romaine lettuce into bite-sized pieces and place it in a large salad bowl.

  2. 11

Add the Caesar dressing, croutons, and Parmesan cheese to the bowl. Toss until everything is evenly coated.
