Preparation

    Prepare the Crispy Potatoes

    If using pre-made crispy potatoes, heat them according to package instructions. If making from scratch, peel and cut potatoes into small cubes, toss with olive oil, salt, and pepper, and bake at 425°F (220°C) for 20-25 minutes until golden and crispy.

    Prepare the Bread

    Slice the ciabatta or sub roll in half and lightly toast in a pan or toaster until golden brown for added texture.

    Layer the Ingredients

    On the bottom half of the toasted bread, spread 1 tablespoon of mayonnaise and 1 tablespoon of Calabrian aioli. Place 2 slices of provolone cheese on top, followed by a generous portion of crispy potatoes.

    Finish the Sandwich

    Top with the other half of the bread and optionally sprinkle fresh basil on top. Press down gently to combine the layers.

    Cut the sandwich in half and serve immediately while the potatoes are hot and crispy. Enjoy with extra mayo or aioli on the side if desired.
