Frittata Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Cook the Potatoes

    In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are tender and starting to brown.

    Caramelize the Onions

    Add the sliced onions to the skillet with the potatoes. Cook for an additional 5-7 minutes until the onions are soft and caramelized.

    Sauté the Mushrooms and Kale

    Add the sliced mushrooms to the skillet and cook for another 5 minutes until they are softened. Then add the chopped kale and cook for an additional 2-3 minutes until wilted.

    Whisk the Eggs

    In a large bowl, whisk together the eggs, salt, and black pepper until well combined.

    Combine Ingredients

    Pour the egg mixture into the skillet, making sure it evenly covers the vegetable mixture. Sprinkle the shredded fontina and grated Parmigiano-Reggiano cheese over the top.

    Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top is golden brown.

    In a large bowl, combine the mixed greens. In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, and season with salt and pepper to taste.
