Preparation

  1. 1

    Prepare the Collard Greens

Rinse the collard greens thoroughly under cold water to remove any dirt or grit. Remove the tough stems and chop the leaves into bite-sized pieces.

  2. 2

    Chop the Onion and Garlic

Peel and finely chop the onion. Peel and mince the garlic cloves.

Cooking

  1. 3

    Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

  2. 4

    Cook the Collards

Add the chopped collard greens to the pot and stir to combine with the onions and garlic. Cook for about 5 minutes until the greens begin to wilt.

  3. 5

    Add Liquids and Seasoning

Pour in the apple cider vinegar and water. Add the red pepper flakes, salt, and black pepper. Stir well to combine all ingredients.

  4. 6

    Simmer

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 30-40 minutes, stirring occasionally, until the collards are tender.

Serving

  1. 7

    Serve Hot

Remove the pot from heat and serve the hot vinegar collards immediately as a side dish. They can be enjoyed on their own or alongside your favorite Southern dishes.
