Cocktail Preparation

Dry Shake
In a cocktail shaker, combine the Cynar, Maple Eau de Vie, Fernet Meletti, Orgeat Syrup, fresh lemon juice, and egg whites. Seal the shaker and shake vigorously without ice for about 15 seconds to emulsify the egg whites.

Wet Shake
Add ice to the shaker and shake again for another 15 seconds to chill and dilute the cocktail.

Strain
Double strain the mixture into a chilled coupe or cocktail glass to ensure a smooth texture.

Garnish
Add 2 dashes of orange bitters on top of the foam created by the egg whites.
