Chocolate Mousse

Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water. Stir until smooth and let cool slightly.

Whip Cream
In a separate bowl, whip the heavy cream until soft peaks form.

Combine Mixtures
Fold the melted chocolate into the whipped cream, followed by the beaten egg whites. Be gentle to maintain the airiness.

Chill
Transfer the mousse into serving glasses and chill in the refrigerator for at least 2 hours.
White Chocolate Anglaise

Prepare Cream Mixture
In a saucepan, combine heavy cream and milk and heat until just below boiling.

Cook Until Thickened
Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.

Melt White Chocolate
Remove from heat and stir in white chocolate until melted and smooth. Let cool.
Chocolate Sponge Cake

Preheat Oven
Preheat your oven to 180°C (350°F) and grease a cake pan.

Mix Dry Ingredients
In a bowl, sift together flour, cocoa powder, sugar, and baking powder.

Combine Mixtures
Gradually add the dry ingredients to the egg mixture and stir until just combined.

Pour the batter into the prepared cake pan and bake for about 20-25 minutes. Let cool.

Spread the mixture on a baking sheet and bake at 150°C (300°F) for about 10-15 minutes or until golden.
