In a bowl, mix the tamari sauce with sea buckthorn juice to create a marinade.

Place the bluefin tuna steak in the marinade, ensuring it is well coated. Cover and refrigerate for about 20 minutes.

While the tuna is marinating, prepare the kohlrabi and Asian pear. Julienne the kohlrabi and thinly slice the Asian pear.

Heat a skillet over high heat and sear the marinated tuna for about 30 seconds on each side, ensuring the inside remains rare.

Remove from heat and let the tuna rest for a couple of minutes before slicing it thinly against the grain.

On a serving plate, arrange the sliced tuna, kohlrabi, and Asian pear attractively.
