Prepare the Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. Add flour and salt, mixing until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise for about 1 hour or until doubled in size.

Shape the Pretzel
Preheat the oven to 450°F (230°C). Punch down the dough and divide it into 2 equal pieces. Roll each piece into a long rope (about 2 feet long) and shape it into a pretzel.

Prepare for Baking
In a large pot, bring 10 cups of water to a boil and add baking soda. Carefully add the pretzels to the boiling water for about 30 seconds each. Remove and place on a baking sheet lined with parchment paper.

Bake the Pretzel
Sprinkle coarse sea salt on top of the pretzels and bake in the preheated oven for 12-15 minutes until golden brown.

Serve
Allow the pretzel to cool slightly before serving with spicy brown mustard on the side.
