Brewing Instructions
1. Mash the Grains
In a large mash tun, combine the pale malt, crystal malt, and roasted barley with 5 gallons of water. Heat the mash to 152°F (67°C) and hold for 60 minutes.
2. Sparge
After mashing, sparge the grains with enough water to collect about 6.5 gallons of wort.
3. Boil the Wort
Bring the wort to a boil and add the bittering hops. Boil for 60 minutes.
4. Add Lactose
During the last 15 minutes of the boil, add the lactose to the wort.
5. Add Aroma Hops
5 minutes before the end of the boil, add the aroma hops.
6. Cool and Ferment
Cool the wort quickly to about 70°F (21°C) and transfer to a fermenter. Pitch the yeast and ferment for about 2 weeks at 68-72°F (20-22°C).
7. Bottle or Keg
After fermentation, bottle or keg the beer with priming sugar if bottling, and let it carbonate for another 1-2 weeks.
8. Enjoy
