Brewing Instructions
1. Mash
In a large brew kettle, heat 5 gallons of water to 165°F (74°C). Add Pilsner malt, Munich malt, and caramel malt to the water and stir well. Maintain the temperature at 150-155°F (65-68°C) for 60 minutes.
2. Sparge
After mashing, sparge the grains with 170°F (77°C) water to collect the wort. Aim for about 6.5 gallons of wort for boiling.
3. Boil
Bring the wort to a boil and add Hallertau hops. Boil for 60 minutes, adding Saaz hops in the last 15 minutes.
4. Cool and Ferment
Cool the wort quickly using a wort chiller. Transfer to a fermentation vessel and pitch the yeast. Ferment at 50-55°F (10-13°C) for 2 weeks.
5. Condition
After fermentation, transfer the beer to a bottling bucket, add priming sugar if bottling, and bottle or keg the beer. Condition for an additional 2 weeks.
6. Enjoy
