Prepare the Patties
In a large bowl, combine the ground beef and chopped bacon. Season with salt and black pepper. Form into two equal patties.

Cook the Patties
In the same skillet, cook the bacon-beef patties over medium-high heat for about 5-6 minutes on each side, or until cooked to your desired doneness.

Add Cheese
Place a slice of Wisconsin cheddar cheese on each patty during the last minute of cooking. Cover the skillet to melt the cheese.

Assemble the Burger
On the bottom half of each burger bun, spread Dijon mustard, then add the cheeseburger patty, caramelized onions, house pickles, and top with the other half of the bun.

Serve the double bacon cheeseburgers immediately with your choice of sides.
