1. Prepare the Pickled Onions

In a bowl, mix apple cider vinegar, water, sugar, and salt until dissolved. Add the sliced red onion, making sure they are submerged. Let sit for at least 30 minutes.

2. Make the Dressing

In a bowl, whisk together feta cheese, lemon juice, dried oregano, minced garlic, olive oil, salt, and black pepper until smooth. Adjust seasoning to taste.

3. Prepare the Fries

Preheat the oven to 425°F (220°C). Cut the russet potatoes into fries, toss with olive oil, salt, and pepper. Spread on a baking sheet and bake for 30-35 minutes, flipping halfway through, until golden and crispy.

4. Assemble the Dish
