    Prepare the Eggs

    Place the eggs in a pot, cover with water, and bring to a boil. Once boiling, cover the pot and remove from heat. Let sit for 10-12 minutes. Then, transfer the eggs to an ice bath for 5 minutes to cool.

    Prepare the Filling

    Once cooled, peel the eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl. Add mayonnaise, Dijon mustard, salt, and black pepper to the yolks. Mash and mix until smooth.

    Add Salami and Pepperonata

    Fold in the chopped salami and pepperonata into the yolk mixture until well combined.

    Fill the Egg Whites

    Spoon or pipe the yolk mixture back into the egg white halves.

    Prepare Parmesan Crisps

    In a skillet, heat olive oil over medium heat. Place small mounds of grated parmesan cheese in the skillet, cooking until melted and golden. Remove and let cool to crisp.

    Garnish and Serve

    Top each deviled egg with a parmesan crisp and sprinkle with fresh parsley. Serve immediately.
