Vanilla Coconut Gelato (single scoop portion)

Molten Dark Chocolate Cake (four mini cakes total; recipe scaled for one serving = includes 4 GFV mini cakes)

Method

Vanilla Coconut Gelato (single scoop portion)

    Combine milk, coconut milk and half the sugar (2 tbs) and the heavy cream in a small saucepan.

    Split the vanilla bean and scrape seeds into the milk mixture (or add vanilla paste). Warm gently over medium heat until it just begins to steam — do not boil.

    Whisk the egg yolk with the remaining 1 tsp sugar in a small bowl until slightly pale.

    Temper the yolk: slowly add about 2 tablespoons of the warm milk mixture into the yolk while whisking, then gradually whisk the warmed yolk back into the saucepan.

    Cook the custard over low heat, stirring constantly with a spatula, until it thickens enough to coat the back of a spoon (about 170–175°F / 77–80°C). Remove from heat and stir in a pinch of salt.

    Strain the custard through a fine-mesh sieve into a bowl to remove any cooked bits and vanilla pod. Cool quickly: set bowl in an ice bath and stir occasionally until room temperature, then chill in refrigerator at least 1 hour (or overnight) until fully cold.

    Churn the chilled custard in a small ice cream maker following manufacturer instructions until it reaches a soft-serve gelato texture. If you don't have a machine, freeze in a shallow container and stir every 20 minutes until smooth and scoopable.

    Freeze the churned gelato briefly (20–30 minutes) so it's scoopable for plating.

Berry Açaí Swirl

    In a small blender or with an immersion blender, combine frozen berries, açaí purée, powdered sugar or simple syrup, and lemon juice. Blitz until smooth and slightly thickened.

    Taste and adjust sweetness; strain through a fine mesh if you prefer a seed-free sauce. Keep chilled until assembly.

Molten Dark Chocolate Cakes (GFV, make 4 mini cakes)

    Preheat oven to 425°F (220°C). Generously butter four 4–6 oz ramekins and dust with cocoa powder, tapping out excess.

    Melt the chopped dark chocolate and butter together in a heatproof bowl set over barely simmering water (double boiler) or in short bursts in the microwave, stirring until smooth. Let cool slightly.

    In a separate bowl, whisk the eggs, additional yolk and sugar vigorously until pale and slightly thickened (ribbon stage).

    Fold the melted chocolate into the egg mixture gently until combined. Add almond flour, cocoa powder and a pinch of salt; fold until just combined — do not overmix.

    Divide a small amount (about 1 tsp) of ganache into the center of each ramekin batter (this creates an extra gooey core). Spoon the batter into the prepared ramekins, leaving the top about 1/4 inch from the rim.

    Bake for 10–12 minutes — edges should be set and slightly risen while centers still look soft. Remove from oven and let sit 1 minute, then run a thin knife around edges and invert each ramekin onto a plate. If you prefer to prepare ahead, bake just until set and refrigerate; rewarm gently (180°F oven 6–8 minutes) before service.

Gooey Dark Chocolate Center (extra)

    To make a quick ganache: place 1 tbsp chopped bittersweet chocolate in a small bowl; heat 1/2 tsp heavy cream until steaming and pour over chocolate. Let sit 30 seconds, then stir until glossy and smooth. Cool slightly so it holds shape but remains pourable.

    Spoon or pipe about 1 teaspoon of this ganache into the center of each ramekin batter before baking (see Molten Cake directions). Reserve a small amount to drizzle if desired.

Garnish & Assembly

    Warm the baked molten cakes briefly if baked in advance: 160–180°F oven for 5–8 minutes until just warmed through but still gooey inside.

    Place one warmed molten cake on the service plate. Using an ice cream scoop, place a single scoop of chilled vanilla coconut gelato adjacent to the cake.

    Drizzle or spoon two small dollops of the berry açaí swirl over and beside the gelato (use about 1–2 tsp total).

    Add a teaspoon of raspberry jam on the plate or a small smear next to the gelato for a bright jammy accent.

    Top the gelato or cake with a light dollop (about 2 tbs) of whipped cream. Garnish with 2 fresh raspberries and a sprinkle of toasted coconut flakes if using.

    Serve immediately so the warm molten cake contrasts with the cold gelato and the gooey chocolate center can spill when cut.
