Prepare grilled chicken
If you don’t have pre-grilled chicken, grill two boneless skinless chicken breasts (about 1 lb total): season both sides lightly with 0.5 tsp salt and 0.25 tsp pepper, grill over medium-high heat 6–8 minutes per side (until internal temp 165°F/74°C). Let rest 5 minutes, then thinly slice into strips. Measure 2 cups sliced chicken for the wraps.
Lemon Vinaigrette
In a small bowl or jar combine 2 tbsp fresh lemon juice, 1 tsp Dijon mustard, 1 tsp honey, 0.5 tsp minced garlic, 0.5 tsp salt and 0.25 tsp black pepper. Whisk while slowly streaming in 0.25 cup olive oil until emulsified. Taste and adjust seasoning. Set aside.
Warm Tortillas & Sauces
Warm tortillas: heat a large skillet over medium, brush lightly with 1 tbsp olive oil, warm each tortilla 20–30 seconds per side until pliable and slightly charred. Keep warm under a clean towel.
Warm chosen sauce: gently warm 0.5 cup tomato sauce or 0.5 cup cheese sauce in a small saucepan over low heat, stirring occasionally. Keep warm until assembly.
Assemble Wraps
Lay one warm tortilla flat. Spread about 1/4 cup hummus in a thin layer over the center third of the tortilla, leaving 1–2 inches clear at the edges.
Drizzle about 1 tablespoon of lemon vinaigrette over 1/2 cup mixed greens then place the dressed greens on top of the hummus in a loose pile.
Top greens with 1/2 cup sliced grilled chicken, a few thin red onion slices (about 1 tablespoon), and 1/4 cup halved strawberries. If using cheese (or pairing with cheese sauce), sprinkle about 2 tablespoons crumbled feta or shredded cheddar now.
Spoon 2 tablespoons of the warmed tomato or cheese sauce over the chicken/strawberries if desired (you may omit sauce for a lighter wrap).
Fold sides of the tortilla in, then roll tightly from the bottom to form a secure wrap. Repeat with remaining tortillas and ingredients to make 4 wraps.
Finish & Serve
If desired, place assembled wraps seam-side down in a hot dry skillet or panini press and grill 1–2 minutes per side to crisp slightly and set the seam. Slice each wrap in half on the diagonal.
Serve wraps immediately with an extra side of warmed sauce for dipping and remaining fresh strawberries on the side.
