Mix dry ingredients

In a large bowl whisk together the flour, sugar, baking powder, and salt until evenly combined and aerated.

Combine wet ingredients

In a separate medium bowl whisk the milk, egg, melted butter (warm, not hot), and vanilla extract until smooth and uniform.

Make the batter

Pour the wet mixture into the dry ingredients. Gently fold with a spatula or whisk just until combined. A few small lumps are fine. Do not overmix to avoid tough pancakes. Let the batter rest 5–10 minutes while you heat the pan; this hydrates the flour and gives lighter pancakes.

Cook bacon or chicken sausage

If you choose bacon: heat a skillet over medium heat. Add the bacon slices and cook 3–5 minutes per side depending on thickness, turning occasionally, until browned and crisp to your liking. Drain on paper towel and keep warm.

If you choose chicken sausage: heat a skillet over medium heat with 1 tsp oil (or a small pat of butter). Add sausage links and cook 8–10 minutes, turning frequently, until browned and cooked through (internal temp 165°F/74°C). Keep warm.

Cook pancakes

Heat a nonstick skillet or griddle over medium (about 350°F/175°C). Lightly grease with a small amount of butter (about 1 tsp) or oil and wipe away excess with a paper towel so the surface is evenly slick but not greasy.

For each pancake, pour or ladle about 1/4 cup of batter onto the hot surface, leaving space between pancakes. Cook undisturbed until bubbles form on the surface and edges look set, about 2–3 minutes.

Flip gently with a spatula and cook the second side until golden brown, about 1–2 minutes more. Adjust heat as needed to prevent burning; reduce heat slightly if pancakes brown too fast.

Transfer cooked pancakes to a plate and keep warm in a low oven (200°F/95°C) or cover loosely with foil while you finish the rest.

Serve

Stack pancakes (2–3 per serving). Place the two slices of cooked bacon across the top of the stack or arrange the two chicken sausage links on the side, depending on which protein you prepared.

Top with a pat of butter if desired, drizzle with maple syrup, and dust lightly with powdered sugar if using. Serve immediately.
