Fresh-Pressed Juices

Method

Fresh-Pressed Juices

  1. 1

    Prepare produce

Wash all fruit and vegetables thoroughly under cold running water. Trim carrot ends and peel if not organic-skinned to preference; if organic, scrubbing is sufficient. Core the apples and cut into pieces that fit your juicer feed chute. Peel the orange and lemon, removing as much pith as possible. Peel the ginger and slice thinly.

  2. 2

    Juicing

Set up a cold-press or centrifugal juicer on a clean surface. Feed apple pieces, carrot pieces, orange segments, lemon, and ginger through the juicer in alternating order to help blend flavors and aid extraction. Collect juice in a clean pitcher. If using a blender instead of a juicer: place apple pieces (cored), carrot slices (pre-steamed 2–3 minutes if your blender is not high-power), orange segments, lemon, ginger, and 100 ml filtered water in the blender. Blend on high until smooth (30–60 seconds), then strain through a fine mesh sieve or nut milk bag into a pitcher, pressing to extract as much liquid as possible.

  3. 3

    Adjust and chill

Taste the juice. If it’s too intense or thick, add up to 50–100 ml more filtered water and stir. If sweeter is desired, add a small amount of honey or maple syrup (not listed as primary ingredient). Fill serving glasses over ice (about 1/4 to 1/2 cup ice per glass) and pour juice. Serve immediately for best nutrient retention.

Organic Coffee

  1. 4

    Grind beans

Measure 30 g of whole-bean organic coffee. Grind just before brewing to a consistency appropriate for your brew method: medium-coarse for pour-over (V60/chemex), medium for drip, fine for espresso. Use a burr grinder for consistent size.

  2. 5

    Heat water

Bring 500 ml filtered water to the proper temperature for brewing: 92–96°C (197–205°F). If you don’t have a thermometer, bring to a boil and let sit for 30 seconds.

  3. 6

    Brew

Brew using your chosen method. For pour-over (recommended): place filter in dripper and rinse with hot water to remove paper taste and preheat vessel. Add ground coffee. Bloom with ~60 ml water and wait 30–45 seconds. Slowly pour remaining water in concentric circles until you reach ~500 ml total. Total brew time should be ~2.5–3.5 minutes for pour-over. For drip, follow machine instructions. For French press: steep 4 minutes, then press slowly.

  4. 7

    Finish and serve

Pour brewed coffee into cups. Add 60 ml optional milk if desired and stir. Sweeten with 1 tsp optional sweetener per cup if desired. Serve hot alongside the fresh-pressed juice. Store leftover cold-brewed coffee in the fridge up to 48 hours; freshly brewed hot coffee is best consumed within 20 minutes for optimal flavor.
