    Prep vegetables

    Trim and finely dice the onion and bell pepper so they cook evenly. Slice mushrooms and halve the tomatoes. Wash and roughly chop the spinach if leaves are large. Thinly slice chives and chop parsley; measure thyme if using.

    Sauté vegetables

    Heat a 10-inch nonstick skillet over medium heat. Add 1 teaspoon olive oil and 1 tablespoon of the butter. Once butter is melted and foaming, add the diced onion and bell pepper. Cook, stirring occasionally, until softened, about 3–4 minutes. Add mushrooms and cook 2–3 minutes until they release moisture. Add halved tomatoes and spinach and cook just until spinach wilts, about 1 minute. Stir in chives, parsley, and thyme. Season lightly with 1/4 teaspoon salt and a pinch of pepper. Transfer the cooked vegetables to a plate and wipe the pan clean with a paper towel.

Egg Base

    Whisk eggs

    Crack the 6 large eggs into a medium bowl. Add 3 tablespoons milk or half-and-half, 3/4 teaspoon of the salt (reserve 1/4 tsp for finishing), and 1/4 teaspoon black pepper. Whisk vigorously until mixture is uniform and slightly frothy—about 20–30 seconds. This adds air for a tender texture.

    Heat pan and melt butter

    Return the cleaned 10-inch skillet to medium-low heat. Add the remaining 1 tablespoon butter and let it melt, swirling to coat the pan. The pan should be hot but not smoking—about 280–300°F if using a thermometer.

Assemble & Cook Omelets or Scrambles

    For omelets (makes 2–3 omelets)

    Pour one-third of the egg mixture into the skillet, tilting the pan so eggs coat the surface evenly. As the eggs begin to set around the edges (about 30–45 seconds), lift edges gently with a spatula and tilt pan so uncooked egg flows underneath. When the top is still slightly moist but not runny (about 60–90 seconds total), sprinkle about one-third of the sautéed vegetable mix across one half, add 1/4 cup shredded cheddar and about 2 tablespoons diced cooked bacon or ham. Fold the other half over the filling and slide the omelet onto a plate. Repeat for remaining portions (use lower heat for subsequent omelets if pan gets hot).

    For scrambles (serves 2–3)

    Pour the entire egg mixture into the skillet over medium-low heat. Let set for 10–15 seconds, then using a spatula, gently pull set edges toward the center, allowing uncooked egg to flow to the bottom. When eggs are about 70% set but still moist, add the sautéed vegetables and the remaining shredded cheddar and diced protein. Continue gently folding until eggs are softly set and creamy but not dry, about 1–2 more minutes. Remove from heat immediately to prevent overcooking.

    Finish & season

    Taste and adjust seasoning: sprinkle the reserved 1/4 teaspoon salt and remaining 1/4 teaspoon pepper across finished omelets/scramble as needed. Crumble optional feta/goat cheese on top if using and garnish with microgreens or extra chopped herbs.
