Combine spices and water
In a small saucepan, add 2 cups water, sliced ginger, crushed cardamom pods, cloves, peppercorns, cinnamon stick and star anise (if using). Bring to a gentle simmer over medium heat.

Simmer to infuse
Reduce heat to low and simmer the spices for 8–10 minutes, uncovered, to extract flavors. Watch carefully so it does not boil away completely.

Strain
Strain the mixture through a fine-mesh sieve or cheesecloth into a heatproof container, pressing on solids to extract liquid. Discard solids. This yields about 2 cups of chai concentrate; use immediately or cool and refrigerate up to 4–5 days.

Heat and froth milk
Pour 1 cup milk into a small saucepan or frothing pitcher. Warm over medium-low heat until steaming but not boiling (about 2–3 minutes). Froth with a milk frother, handheld whisk, or by vigorously shaking in a sealed jar for 20–30 seconds until foamy.

Garnish and serve
Optional: top with 2 tbsp whipped cream and a light dusting (about 1/4 tsp) of ground cinnamon. Serve immediately.
