    Preheat the oven to 350°F (175°C). In a bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and let cool.

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the sugar and mix until well combined. Add sour cream, vanilla extract, and mix until smooth. Add eggs one at a time, mixing well after each addition. Pour the filling over the cooled crust.

    Bake the Cheesecake

    Bake the cheesecake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour. Then, refrigerate for at least 4 hours or overnight.

    In a bowl, combine the seasonal fruit, sugar, and lemon juice. Toss gently to coat the fruit and let it sit for 15 minutes to release juices.
