UNTAPP’D Base & Beer Pairing
Measure and chill
Chill both beers thoroughly before assembling — ideally in the refrigerator for several hours. Measure 4 cups of pilsner/light lager and 2 cups of Belgian witbier/wheat beer. Keep bottles/cans cold until ready to pour to maintain carbonation.
Work gently when combining beers: pour the pilsner into a large pitcher first, then slowly add the wheat beer down the side of the pitcher to retain a moderate head and preserve aromatics.
Citrus & Sweet
In a small bowl or measuring cup combine 2 tablespoons fresh lemon juice, 2 tablespoons fresh orange juice and 1 tablespoon simple syrup. Stir until the syrup is fully dissolved. Taste and adjust: the mix should be bright and only lightly sweet, as beer will add more body.
Add the citrus-syrup mix to the combined beers in the pitcher. Stir gently twice with a long spoon to integrate, avoiding vigorous stirring that will flatten carbonation.
Herbal & Aromatic
Lightly bruise fresh mint and basil leaves to release oils: hold a small handful and clap them between your hands once or press gently with the back of a spoon. Add the herbs to the pitcher and stir gently once to disperse aromatics.
If using orange peel for garnish, twist the peel over the pitcher or a glass to express the oils, then drop the peel into the pitcher or reserve for individual glasses.
Optional Brighteners & Salt
If using bitters, add 2 dashes of Angostura bitters to the pitcher and stir very gently. Bitters add subtle depth and balance to the citrus and malt notes.
For a subtle saline accent: moisten rims of serving glasses with a lemon wedge and dip into 1/4 teaspoon flaked sea salt distributed across a small plate. This is optional and recommended if serving with salty snacks.
Ice & Serve
Fill each serving glass with about 1/2 cup (approx. 4–5) ice cubes. Pour the beer mixture over the ice, dividing evenly among 4 glasses. Pour gently over the back of a spoon or down the side of the glass to preserve carbonation.
Garnish each glass with a lightly twisted orange peel and a small sprig of mint or basil. Serve immediately while bubbly and cold.
