Prepare chickpeas

If using canned chickpeas: drain and rinse 2 cups of chickpeas thoroughly. Reserve 3 tablespoons of the can liquid (aquafaba) and set aside. If you prefer ultra-smooth hummus and have time: peel skins from chickpeas by gently rubbing between your hands or pinch each bean — optional. If using dried chickpeas: soak overnight, then simmer with 1/2 tsp baking soda until very tender (about 45–90 minutes); drain and reserve 3 tbsp cooking liquid.

Optional roast for depth

For a deeper flavor, spread drained chickpeas on a baking sheet, drizzle 1 tsp olive oil and roast at 400°F (200°C) for 10–12 minutes until slightly golden. Let cool before blending.

Tahini & Seasoning

Emulsify tahini and lemon

In a food processor or high-speed blender, combine 1/2 cup well-stirred tahini and 3 tablespoons fresh lemon juice. Process for 30–60 seconds until mixture thickens and lightens in color, scraping down sides once. This step creates a smooth, fluffy base.

Add aromatics and oil

Add 3 tablespoons extra-virgin olive oil, 2 cloves minced garlic, 1 tsp ground cumin, 1/2 tsp smoked paprika, 1 tsp kosher salt, and 1/4 tsp black pepper to the tahini-lemon mixture. Pulse once to combine.

Combine & Smooth

With the processor running on low, add the chickpeas in two batches. After first batch is mostly broken down, add reserved aquafaba (or 3 tbsp water) and the 2 ice cubes (or very cold water) to help emulsion and chill the hummus. Continue processing until mixture becomes creamy, 2–4 minutes, scraping down sides as needed.

Add the roasted red peppers (1/2 cup) and sun-dried tomatoes (1/4 cup) and process another 30–60 seconds for a ‘deluxe’ flavored hummus with sweet-roasted and umami notes. If you prefer a classic plain hummus, omit peppers and sun-dried tomatoes and finish here.

Taste and adjust seasoning: add more salt, lemon juice, or olive oil to reach desired brightness and texture. If too thick, add additional aquafaba or cold water 1 tablespoon at a time until smooth and spreadable.

Finishing & Garnish

Transfer hummus to a shallow serving bowl and use the back of a spoon to create a swirl in the surface.

Drizzle 1 tablespoon extra-virgin olive oil over the top, sprinkle reserved whole chickpeas (1/4 cup), toasted pine nuts or chopped pistachios (2 tbsp), chopped fresh parsley (1 tbsp), and a light dusting of smoked paprika (1/4 tsp). Finish with a pinch of sea salt flakes to taste.

Serve immediately with pita, fresh vegetables, or store in an airtight container in the refrigerator for up to 4 days. Bring to room temperature and stir before serving.
