Vanilla Cheesecake Bars
Make the filling: In a mixer, beat the softened cream cheese on medium speed until smooth and free of lumps (about 2–3 minutes). Add granulated sugar and beat until combined. Add eggs one at a time, mixing until each is incorporated. Scrape down the bowl, then mix in sour cream and vanilla extract until smooth. Do not overmix.
Pour the cheesecake filling onto the warm crust, smoothing the top with an offset spatula. Bake at 160°C (325°F) for 30–35 minutes, until the edges are set and the center still slightly jiggles. Turn off oven, crack door, and let bars cool in oven for 1 hour to reduce cracking.
Chocolate Blackout Cake Slices
Preheat oven to 175°C (350°F). Prepare a 20cm (8in) round pan (or use sheet and cut slices) by greasing and lining the base.
Whisk dry ingredients: Sift together flour, cocoa powder, baking powder, baking soda and salt into a bowl.
Combine wet ingredients: In a separate bowl, whisk together sugar, eggs, buttermilk and vegetable oil until smooth. Stir in the espresso.
Combine and add hot water: Fold wet mixture into the dry ingredients until just combined. Stir in hot water gradually — batter will be thin. Pour into the prepared pan and bake for 25–30 minutes (or until a toothpick comes out with moist crumbs). Cool completely on a wire rack.
Make chocolate ganache: Place chopped dark chocolate in a heatproof bowl. Heat heavy cream until just simmering and pour over the chocolate. Let sit 1 minute, then whisk until glossy and smooth. Cool slightly until pourable but thick.
Assemble: If using a whole cake, slice into 3 generous slices. Spoon or pour ganache over each slice to coat top and sides; let ganache set at room temperature or chill briefly. Garnish each slice with a small mint leaf.
Seasonal Fruit Tartlets
Prebake or prepare pastry shells according to package or recipe instructions and let cool completely.
Fill each cooled shell with approximately 100ml (or to taste) of chilled pastry cream, smoothing the top with a spatula.
Arrange assorted fresh fruit attractively on top of the cream in each tartlet — mix colors and textures for visual appeal.
Make glaze: Warm apricot jam with 1 tsp water in a small saucepan or microwave until runny. Strain if necessary. Using a pastry brush, lightly glaze fruit to give shine and help preserve freshness.
Chill the tartlets for at least 30 minutes before display. Place on individual plates or in the case on small paper liners and garnish with a tiny mint leaf if desired.
Lemon Curd Meringue Cups
If using store-bought tart shells, ensure they are at room temperature. Spoon about 60g of lemon curd into each shell, smoothing the top.
Make Swiss meringue: Combine egg whites and granulated sugar in a heatproof bowl set over a pot of barely simmering water (double boiler). Whisk constantly until sugar dissolves and mixture reaches 60°C (140°F) or feels warm and smooth to the touch (about 3–4 minutes).
Transfer to a stand mixer and whip with the whisk attachment on high speed until stiff, glossy peaks form and the bowl is cool to the touch (about 5–7 minutes). Add cream of tartar toward the end to stabilize and fold in lemon zest if using.
Chill briefly (15–20 minutes) to set, then add a small mint leaf as garnish before placing in the dessert case.
Finishing and Display
Arrange 3 pieces of each dessert (cheesecake bar, chocolate cake slice, fruit tartlet, lemon meringue cup) in the refrigerated dessert case with small spaces between for easy selection.
Label each item clearly with name and any common allergen notes (contains dairy, eggs, gluten, nuts if applicable).
Just before service, dust cheesecake bars and tartlet edges lightly with powdered sugar and add mint leaves to the chocolate slices and tartlets for freshness and color.
