Cake Batter
Dry ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until evenly combined.
Wet ingredients
In the bowl of a stand mixer fitted with the paddle attachment (or a large mixing bowl with a hand mixer), combine the granulated sugar, light brown sugar, eggs, vegetable oil, buttermilk, and vanilla extract. Beat on medium speed for 1–2 minutes until homogenous and slightly thickened.
Combine batter
With the mixer on low, gradually add the dry ingredients to the wet ingredients in two additions, mixing only until just combined after each addition to avoid overworking the batter. Scrape down the bowl once.
Add carrots and mix-ins
Fold in the grated carrots, chopped nuts (if using), crushed pineapple (well drained, if using), and shredded coconut (if using) with a spatula until evenly distributed. The batter will be thick and moist.
Portion and bake
Divide the batter evenly among the four prepared 8-inch pans (use a kitchen scale or measure by volume; roughly 2 to 2 1/4 cups batter per pan). Smooth the tops. Bake for 18–22 minutes, rotating pans halfway through, until a toothpick inserted into the center comes out with a few moist crumbs and the tops spring back to the touch.
Cool layers
Remove pans to a wire rack and let cakes cool in pans for 10 minutes. Run a thin knife around pan edges, invert onto racks, remove parchment, then invert again right-side-up on the racks. Cool completely (at least 1 hour) before icing. Chill layers 20–30 minutes if they seem fragile—this makes leveling easier.

Soften and whip
Cut cold cream cheese into chunks and place in the mixer bowl. Add room-temperature butter. Beat on medium speed until mixture is smooth and lump-free, about 2–3 minutes. Scrape down the bowl.
Adjust texture
Increase mixer speed to medium-high and whip for 1–2 minutes until light. Add heavy cream (or milk) one tablespoon at a time as needed to reach a spreadable yet stable consistency suitable for stacking. If using, fold in the 1/4 cup finely grated carrot by hand to incorporate delicate flecks of carrot without releasing excess moisture.
Chill if needed
If the frosting is too soft for stacking, chill in the refrigerator 15–20 minutes, then re-whip briefly to restore spreadability.
Finish / Assembly
Level and prepare layers
If cake tops are domed, level each layer with a serrated knife or cake leveler so layers stack evenly. Place the first layer on a cake board or serving plate and spread about 3/4 to 1 cup of icing evenly over the layer to the edge.
Stack
Place the second cake layer on top and press gently to adhere. Repeat with remaining layers, using approximately 3/4 to 1 cup icing between each layer for even filling. Reserve roughly 2 to 2 1/2 cups of icing for the crumb coat and final outer finish.
Crumb coat
Apply a thin crumb coat of icing around the top and sides of the stacked cake to trap crumbs. Smooth gently with an offset spatula, then chill the cake for 20–30 minutes to set the crumb coat.
Final coat and decorate
Apply the remaining icing in a thicker, smooth final coat. Use an offset spatula or bench scraper to finish the sides and top. Press extra chopped nuts onto the sides or sprinkle on top as desired. Garnish with grated carrot curls or candied carrot ribbons if using. Refrigerate the finished cake for at least 30 minutes to set before slicing for clean cuts.
Storage
Store covered in the refrigerator for up to 4–5 days. For best texture, bring slices to room temperature for 20–30 minutes before serving. The cake can be wrapped tightly and frozen (unfrosted layers or fully frosted) for up to 2 months; thaw overnight in the refrigerator.
