Prepare bread
If you prefer the sandwich toasted, spread about 1/2 tablespoon butter on one side of each of the four bread slices. Heat a skillet over medium heat and toast the buttered sides until golden, 1–2 minutes per side. If not toasting, leave bread slices as-is.
Prepare vegetables
Slice the tomato into 1/4-inch thick rounds (about 4–6 slices from a large tomato). Pat tomato slices dry with a paper towel to remove excess moisture. Season the tomato slices lightly with a pinch of the salt and a little of the black pepper (reserve remainder for later).
Assemble meats and cheeses
Lay out the four bread slices on a work surface. Evenly spread mayonnaise over one side of each slice (about 3/4 teaspoon per slice). On two of the bread slices (these will be the internal layers), place half of the turkey (4 oz) in an even layer, then top with half of the smoked Gouda (2 oz). On the other two bread slices, place half of the ham (4 oz) and half of the Swiss cheese (2 oz). Reserve the summer sausage for a central layer: arrange the entire 6 oz of thinly sliced summer sausage over one of the turkey+Gouda slices so it overlaps slightly.
Layer lettuce and tomato
On the ham+Swiss slices, place two lettuce leaves each. Over the summer sausage layer (on the turkey+Gouda slice), lay tomato slices evenly. Sprinkle the remaining pinch of salt and the rest of the black pepper over the tomato slices to enhance flavor.
Stack the sandwich
Assemble the sandwich in this order to create a four-slice stacked sandwich: start with one turkey+Gouda slice (with or without summer sausage depending on your layout), top with a ham+Swiss slice, then place the other turkey+Gouda slice, and finish with the remaining ham+Swiss slice so all four slices of bread are used. Make sure mayonnaise sides face inward toward the fillings. Press down gently to compress layers so the sandwich holds together.
Slice and serve
Using a sharp knife, cut the stacked sandwich in half (or into quarters) to make it easier to eat. If desired, secure each portion with a toothpick. Serve immediately so the lettuce remains crisp and the bread retains its texture.
