Choose proteins

Decide which two proteins you want from ham, turkey or roast beef. This recipe by default uses both ham (6 oz) and turkey (6 oz). If you prefer roast beef instead of one, substitute equal weight and pat dry any excess moisture with paper towel.

Cook bacon

Place 6 bacon strips in a cold skillet in a single layer. Cook over medium heat, turning occasionally, until crisp, 8–12 minutes depending on thickness. Transfer to a paper-towel-lined plate to drain and cool; when cool, cut each strip in half if desired.

Prepare bread and toast (optional)

Lightly butter one side of each of the 9 bread slices (2 tbs butter total). Heat a large skillet or griddle over medium heat and toast buttered sides until golden, 1–2 minutes per side. Alternatively, toast slices in a toaster then butter lightly. You should have 3 toasted slices per finished sandwich (bottom, middle, top).

Slice tomato and season

Thinly slice the large tomato into 6–8 slices. Lay slices on paper towel and sprinkle with 1/2 tsp kosher salt and 1/8 tsp black pepper; set aside to drain slightly for 2 minutes.

Assemble first layer

Place the first toasted bread slice, toasted side down, on a clean work surface. Spread about 1 tablespoon mayonnaise evenly over the slice. Layer half the selected deli meat (for this recipe, 3 oz turkey), then 1 slice Swiss cheese, then two lettuce leaves.

Add middle layer

Place a second toasted bread slice on top of the first layer, toasted side down. Spread about 1 tablespoon mayonnaise on this middle slice. Layer the remaining deli meat choice (for this recipe, 6 oz ham) and another slice of Swiss cheese. Add 3–4 tomato slices evenly over the cheese, then top with the cooked bacon (all 6 strips arranged to cover).

Top and finish

Spread about 1 tablespoon mayonnaise on one side of the final toasted slice; place mayo side down over the bacon and tomato to complete the triple-decker. Lightly press the sandwich together.

Secure and slice

Insert two toothpicks or cocktail skewers through the sandwich at opposite corners to hold layers. Using a sharp serrated knife, cut off the crusts if desired and slice the sandwich diagonally into quarters or halves.

Serve

Arrange sandwich pieces on a plate and serve immediately. Offer extra mayonnaise or pickles on the side if desired.
