Cheese Spreads

Method

Prepare Cheese Spreads

1

Soften and combine

If the Boursin or Cheddar spread is very firm or refrigerated, let it sit at room temperature 15–20 minutes so it becomes easily spreadable. If you want a slightly creamier, looser texture, combine the 8 oz cheese spread with the optional 2 oz cream cheese in a small bowl and stir until smooth and homogenous.

2

Season and finish

Fold in 1 tablespoon of the sliced chives and the freshly ground black pepper. Taste and add up to the remaining chive tablespoon if desired. Transfer the spread to a small serving bowl and smooth the top with the back of a spoon.

Prepare Accompaniments

3

Arrange the assorted crackers on a serving platter in small piles or fanned groups so guests can easily pick them up.

4

Rinse and dry the grapes or core and thinly slice the apple (if using apple, toss slices briefly with a squeeze of lemon if you want to slow browning). Place fruit on the platter near the crackers.

5

Drain and place cornichons or dill pickles into a small bowl or section of the platter.

6

If using toasted nuts, scatter them in a small pile on the platter or in a small bowl.

Assemble & Garnish

7

Drizzle the optional 2 tsp honey in a thin line across the cheese spread or serve the honey in a small dish for guests who want a touch of sweetness.

8

Add a light drizzle of the optional 1 tsp olive oil over the spread if using, then sprinkle the remaining 1 tablespoon of sliced chives and place a few parsley sprigs on the platter for color.

9

Place the bowl of cheese spread in the center or at an accessible spot on the platter with crackers, fruit, pickles, nuts, and garnishes arranged around it.

10

Provide small spreaders or butter knives so guests can serve themselves without contaminating the main spread.
