Warm and soften pitas
Preheat oven to 350°F (175°C). Lightly brush both sides of each pita with the 1 tsp softened butter or olive oil. Wrap pitas in aluminum foil and place in the oven for 6–8 minutes until warm and pliable, or toast lightly in a skillet over medium heat for 1–2 minutes per side. Keep wrapped to remain warm while you cook bacon and eggs.

Crisp the bacon
Arrange the 6 bacon slices in a cold skillet in a single layer. Place skillet over medium heat and cook, turning occasionally, until bacon is evenly browned and crisp, about 8–10 minutes depending on thickness. Transfer cooked bacon to a paper towel–lined plate to drain. Sprinkle bacon with the 1 tsp black pepper while still hot. Reserve 1 tsp of bacon fat in the skillet for frying the eggs (or discard excess and use butter if preferred).
Cut bacon for filling
When slightly cooled, stack the bacon slices and cut or tear into pieces roughly 1–2 inches long so they fit easily inside the pita pockets.

Prepare eggs
Crack the 4 large eggs into a bowl. Add 2 tsp milk and 1 tsp salt, then gently whisk just until combined (do not overbeat). Alternatively, cook eggs individually if you prefer intact fried eggs—the quantities below assume you will fry them mostly intact but with slightly set yolks.
Fry eggs
Heat the reserved 1 tsp bacon fat (or 1 tbsp butter) in the skillet over medium-low to medium heat. For two pitas, you can fry eggs two at a time. Crack an egg into the skillet and cook until the whites are set but yolks remain slightly runny, about 2–3 minutes. If you prefer yolks more set, cover the skillet with a lid for 30–60 seconds or flip the egg and cook for an additional 20–30 seconds for over-easy. Repeat for the remaining eggs. Season each egg lightly with a pinch of salt as they cook.
Assemble
Carefully open each warmed pita pocket to form a pocket. If needed, cut the top to create a larger opening.
Divide the bacon pieces evenly between the two pitas (about 3 slices worth per pita), placing them into the bottom half of each pocket.
Place two cheese-topped fried eggs (or half of the scrambled egg mixture) into each pita on top of the bacon. If any cheese remains, sprinkle it inside so it melts from the residual heat.
