Dough Preparation

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until evenly mixed.

Add Wet Ingredients
Make a well in the center of the dry ingredients and add warm water and vegetable oil. Mix using your hands or a wooden spoon until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Rest the Dough
Cover the dough with a clean kitchen towel and let it rest for at least 30 minutes.

Prepare the Filling
In a medium bowl, mix the refried beans, shredded cheese, chopped green onions, and diced jalapeños (if using) until well combined.
Sopapilla Assembly and Cooking

Roll Out the Dough
After resting, divide the dough into 4 equal pieces. Roll each piece into a circle about 1/8 inch thick.

Fill the Dough
Place a generous amount of the filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.

Heat Oil
In a deep frying pan, heat vegetable oil over medium heat until hot (about 350°F or 175°C).

Fry the Sopapillas
Carefully place the stuffed sopapillas in the hot oil and fry for about 2-3 minutes on each side, or until golden brown. Remove and drain on paper towels.

Serve the stuffed sopapillas warm with a side of cooked rice and your choice of red or green chile sauce drizzled over the top.
