Dough Preparation

    Combine Dry Ingredients

    In a large bowl, mix together the flour, baking powder, and salt until well combined.

    Add Wet Ingredients

    Make a well in the center of the dry ingredients and add the vegetable oil and warm water. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth.

    Rest the Dough

    Cover the dough with a kitchen towel and let it rest for 30 minutes.

Filling Preparation

    Mix Filling Ingredients

    In a medium bowl, combine the cooked shredded chicken, cream cheese, shredded cheddar cheese, sour cream, chopped green onions, salt, and pepper. Mix until well blended.

Assembling and Frying

    Roll Out the Dough

    After the dough has rested, roll it out on a floured surface to about 1/8-inch thick.

    Cut the Dough

    Use a round cutter or glass to cut out circles of dough, about 4-5 inches in diameter.

    Fill the Sopapillas

    Place about 2 tablespoons of the filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.

    Heat the Oil

    In a large, deep frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Fry the Sopapillas

    Carefully place a few sopapillas in the hot oil, frying for about 2-3 minutes on each side until golden brown. Remove and drain on paper towels.

    Serve the stuffed sopapillas warm with your choice of dipping sauce or toppings.
