    Prep the Bell Peppers

    Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them upright in a baking dish.

    Cook the Filling

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent (about 3-5 minutes). Add the ground beef, breaking it apart with a spoon, and cook until browned (about 6-8 minutes). Drain excess fat if needed.

    Combine Ingredients

    Stir in the cooked rice, diced tomatoes, chili powder, cumin, salt, and black pepper into the beef mixture. Cook for an additional 2-3 minutes until heated through. Remove from heat and stir in half of the shredded cheese.

    Stuff the Peppers

    Fill each bell pepper with the beef and rice mixture, pressing down gently to pack the filling. Top each stuffed pepper with the remaining shredded cheese.

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Once baked, remove the stuffed peppers from the oven. Garnish with chopped fresh parsley before serving. Enjoy your delicious stuffed bell peppers!
