Preparation of Steak

    Marinate the Steak

    In a bowl, combine the flank steak with olive oil, salt, and black pepper. Rub the mixture all over the steak and let it marinate for at least 30 minutes at room temperature or refrigerate for up to 2 hours.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Cook the marinated flank steak for about 5-7 minutes on each side for medium-rare doneness, or until it reaches your desired level of doneness. Remove from heat and let it rest for 5 minutes before slicing.

    Heat the Sauce

    In a small saucepan, heat the red and green chile sauces over low heat until warmed through, about 5-10 minutes. Stir occasionally to prevent sticking.

    Prepare the Papas

    Peel and dice the potatoes into small cubes. Boil in salted water until tender, about 10-15 minutes. Drain and set aside.

    Prepare Rice & Beans

    If not already cooked, prepare the rice according to package instructions. Heat the black beans in a saucepan until warmed through.

    Warm the Tortillas

    Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side or until soft and pliable.

Assembly

    Plate the Dish

    Slice the rested steak against the grain and place it on a serving plate. Smother with the warmed red or green chile sauce. Serve alongside the boiled papas, cooked rice, black beans, and warm tortillas.
