Prepare the Ingredients
Start by preparing all the ingredients. Dice the chile peppers, onion, and tomato. Chop the tortillas into bite-sized pieces, and make sure the cooked rice, beans, and papas are ready to use.

Whisk the Eggs
In a mixing bowl, crack the eggs and whisk them together until well combined. Add salt and black pepper to taste, and mix well.

Cook the Vegetables
In a large skillet, heat the olive oil or butter over medium heat. Add the diced onion and cook for 2-3 minutes until translucent. Then add the diced chile peppers and cook for another 2 minutes.

Add Other Ingredients
Stir in the cooked rice, beans, papas, and chopped tortillas. Cook for an additional 2-3 minutes until heated through.

Cook the Omelette
Allow the omelette to cook for about 4-5 minutes on medium-low heat, or until the eggs are set but still slightly runny on top.

Add Cheese and Tomato
Sprinkle the grated cheese and diced tomato on top of the omelette. Cover the skillet with a lid and cook for an additional 2-3 minutes until the cheese melts.

Serve
Once the cheese is melted and the omelette is fully cooked, carefully slide it onto a plate. Cut it in half or quarters and serve warm.
