Begin by peeling the Russet potatoes. Using a box grater or a food processor with a grating attachment, shred the potatoes into a large bowl. If using onions, finely chop them and add to the potatoes.

Rinse the shredded potatoes under cold water to remove excess starch. Drain well and then spread the potatoes onto a clean kitchen towel. Pat them dry to remove as much moisture as possible.
