    Prepare the Pork

    Cut the lean pork into bite-sized pieces and season with cumin, salt, and black pepper.

    Cook the Pork

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned pork and cook until browned and cooked through, approximately 7-10 minutes. Remove from the skillet and set aside.

    Fry the Potatoes

    In the same skillet, add another tablespoon of olive oil. Add the diced potatoes and cook until golden brown and crispy, about 10-15 minutes. Stir occasionally to ensure even cooking.

    Add Garlic

    Once the potatoes are cooked, add the minced garlic to the skillet and cook for another 1-2 minutes until fragrant.

    Combine Ingredients

    Return the cooked pork to the skillet with the potatoes. Stir in the chopped green chiles and black beans. Cook for an additional 5 minutes until everything is heated through.

    Finish and Serve

    Remove from heat, squeeze fresh lime juice over the mixture, and garnish with chopped cilantro. Serve hot.
