Cook the Beef
In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic, sauté until the onion is translucent.

Add Ground Beef
Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.

Season the Mixture
Stir in the black beans, salt, black pepper, cumin, and chili powder. Cook for an additional 5 minutes until the mixture is heated through. Remove from heat.

Prepare the Sopapillas
In a separate bowl, shred the lettuce and cheese. Set aside.

Stuff the Sopapillas
Take a sopapilla and carefully slice it open without cutting all the way through. Fill it with a generous amount of the beef and bean mixture, followed by shredded lettuce and cheese.

Serve
Repeat the stuffing process for the remaining sopapillas. Serve warm with your favorite salsa or hot sauce.
